These rainbow sprinkle cookies were created out of pure luck but they’re super yummy and EASY! Lately, I have been trying to bake more. My mom-mom passed away this past year and I have many fond memories baking with her. I want to create more memories like those but with my son. Although, I have mostly been baking while he naps. I enjoy the time I get to be creative in the kitchen. Haha!
These rainbow cookies are just a simple chocolate chip cookie recipe but without the chocolate. Although, you could very well had chocolate chips if that is your thing. I have added the option the recipe description below.
INGREDIENTS
- 2 1/4 cups of all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup (2 sticks butter, softened)
- 3/4 granulated sugar
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup rainbow sprinkles
- Optional: 3/4 cups of chocolate chips
DIRECTIONS
- Preheat oven to 375°F
- In a bowl combine flour, baking soda and salt.
- In a large mixing bowl, beat butter, granulated sugar, brown sugar and vanilla extract until creamy.
- Add eggs, one at a time, beating well after each one.
- Gradually add in flour mixture.
- Stir in rainbow sprinkles.
- Optional: Stir in chocolate chips.
- Roll into tablespoon balls and dip top side onto rainbow sprinkles.
- Place onto ungreased baking sheet.
- Bake for 9 to 11 minutes or until golden brown. Cool on baking sheet.
- Enjoy!
