Rainbow Sprinkle Cookies

These rainbow sprinkle cookies were created out of pure luck but they’re super yummy and EASY! Lately, I have been trying to bake more. My mom-mom passed away this past year and I have many fond memories baking with her. I want to create more memories like those but with my son. Although, I have mostly been baking while he naps. I enjoy the time I get to be creative in the kitchen. Haha!

These rainbow cookies are just a simple chocolate chip cookie recipe but without the chocolate. Although, you could very well had chocolate chips if that is your thing. I have added the option the recipe description below.

INGREDIENTS

  • 2 1/4 cups of all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks butter, softened)
  • 3/4 granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup rainbow sprinkles
  • Optional: 3/4 cups of chocolate chips

DIRECTIONS

  1. Preheat oven to 375°F
  2. In a bowl combine flour, baking soda and salt.
  3. In a large mixing bowl, beat butter, granulated sugar, brown sugar and vanilla extract until creamy.
  4. Add eggs, one at a time, beating well after each one.
  5. Gradually add in flour mixture.
  6. Stir in rainbow sprinkles.
  7. Optional: Stir in chocolate chips.
  8. Roll into tablespoon balls and dip top side onto rainbow sprinkles.
  9. Place onto ungreased baking sheet.
  10. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheet.
  11. Enjoy!
