As soon as September hits it is time to pull out the fall crockpot recipes. Sundays are usually the day I use the crockpot most. It’s our day where we’re enjoying family, football and preparing for the week ahead. I am also a huge fan of Weight Watchers friendly recipes that the family enjoys. It’s a win win in my book. Below is the recipe for ZERO POINT Taco Soup. I think it could even be considered a taco chili. My husband used a slotted spoon and added it to a wrap.
Ingredients
- 4 chicken breasts
- 1 can of pinto beans
- 1 can of corn (or 3 ears of fresh corn)
- 1 can of black beans
- 1 can of diced tomatoes
- 2 cups of chicken broth
- 2 tbsp of garlic cloves (we love garlic)
- 1 white onion diced
- 1 packet of taco seasoning
- Optional topping: fat free greek yogurt, sour cream or cheddar cheese (additional WW points)
Directions
- Add all ingredients except the topping to crockpot. Cook on high for 4 hours.
- Shred chicken once chicken is cooked through and add back into the crockpot.
- Enjoy!
