Blackberry Cobbler Pie Bars

Got blackberries? Then this is the recipe to try! These blackberry cobbler pie bars came to life after we went blackberry picking. We picked almost 12 pounds of blackberries at Mood’s Farm Market in Mullica Hill, NJ. I knew I needed to come up with something! This recipe is super easy and crazy delicious.

Ingredients

  • 4 cups of fresh blackberries (or berry of your choosing)
  • 3 cups of all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 4 tsp cornstarch
  • 1/4 tsp salt
  • 1 1/2 cups sugar
  • 2 tsp vanilla extract
  • 1 cup of unsalted butter
  • 1 egg
  • 1 lemon, zest and juice

Directons

  1. Preheat the oven to 375°F.
  2. In a food processor, pulse together flour, 1 cup of sugar, baking powder, cinnamon salt and lemon zest. Add the butter, egg and vanilla extra. Pulsing until dough is crumbly.
  3. Grease a 9×13 inch pan.
  4. Press half of dough into the bottom of the greased pan. Save the remaining dough for the topping.
  5. In a medium bowl, stir together the remaining 1/2 cup sugar, cornstarch and lemon juice. Gently mix in the blackberries.
  6. Sprinkle the blackberry mixture evenly over the crust.
  7. Crumble remaining dough over the blackberry layer.
  8. Bake in preheated oven for about 35 – 45 minutes, or until top is slightly brown. (My oven allowed for 35 minutes).
  9. Cool completely before cutting into squares.
  10. Enjoy with whipped cream or ice cream!
