These pistachio cranberry cookies are so so delicious and different. The texture is unlike any other cookie. These cookies are a go to during the holidays but obviously you can enjoy them any time of the year. If you’re unsure about the pistachio cranberry combo, trust me and give it a try.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon of vanilla
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 baking soda
- 1 cup crisp rice cereal
- 1/2 cup old-fashioned oats
- 1/2 cup dried cranberries
- 1/2 cup chopped pistachios
Directions
- In a large mixing bowl, cream the butter, oil and sugars.
- Beat in egg and vanilla.
- In a separate bowl combine the flour, salt, baking powder and baking soda then gradually add to the creamed mixture.
- Stir in the cereal, oats, cranberries and pistachios.
- Drop by tablespoonfuls (do not roll) 2 inches apart onto ungreased baking sheets.
- Bake at 350° F for 10-12 minutes or until lightly browned.
- Remove onto wire racks to cool.
