Pistachio Cranberry Cookies

These pistachio cranberry cookies are so so delicious and different. The texture is unlike any other cookie. These cookies are a go to during the holidays but obviously you can enjoy them any time of the year. If you’re unsure about the pistachio cranberry combo, trust me and give it a try.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon of vanilla
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 baking soda
  • 1 cup crisp rice cereal
  • 1/2 cup old-fashioned oats
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pistachios

Directions

  1. In a large mixing bowl, cream the butter, oil and sugars.
  2. Beat in egg and vanilla.
  3. In a separate bowl combine the flour, salt, baking powder and baking soda then gradually add to the creamed mixture.
  4. Stir in the cereal, oats, cranberries and pistachios.
  5. Drop by tablespoonfuls (do not roll) 2 inches apart onto ungreased baking sheets.
  6. Bake at 350° F for 10-12 minutes or until lightly browned.
  7. Remove onto wire racks to cool.
  8. Enjoy!
