INGREDIENTS

  • 1 stick of room temperature unsalted butter
  • 1 2/3 cups of flour
  • 4 extremely ripe bananas, peeled and sliced. (Do not mash)
  • 1/4 cup of sour cream
  • 1/4 cup of toffee bits (not chocolate)
  • 1 tsp of vanilla
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 cup of pack brown sugar
  • 2 large eggs at room temperature
  • 9×5 loaf pan

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Combine sliced bananas, sour cream, vanilla and toffee bits in a bowl.
  3. In another bowl combine flour, baking powder, baking soda and salt.
  4. In electric mixer cream butter and brown sugar together until smooth.
  5. Beat in eggs one at a time to butter and sugar mixture. Continue to beat for additional 2 minutes.
  6. Add dry ingredients 1 cup at a time beating on low until fully mixed.
  7. Fold in the banana mixture.
  8. Add finished mixture into a greased 9×5 greased loaf pan.
  9. Bake approximately 60 minutes. The top of the bread should be golden brown and the sides should be pulling away from the pan when it is done. Cool on a wire rack for 30 minutes.
